Trying to lose the baby weight. Not going well. Mostly because I eat whatever the heck I want. Like, three cups of coffee (with creamer, duh) and a double cheeseburger (and fries and a pie) from the drive thru and then chips and dip when I get home (paired with a couple beers, of course) and then I’ll cook dinner which is usually meat and rice (man, I love rice so hard) and rolls and corn.
It’s, like, a great mystery as to why this weight isn’t just falling off of me. I’m so confused. Anyway, I’ve been dabbling in the overnight oats world this week–trying to start my days off on the right foot (in the hopes that I’ll keep standing on that same foot throughout the day). And I wanted to share my overnight oat recipe in the event that you want to join me in semi-healthy eating (in between doing absolutely nothing and then complaining about not looking like we did in high school). You in? Cool.
Overnight Oats
1/2 cup oats
1 cup cashew milk (found it at Kroger)
1/2 banana (cut into 1/2 inch pieces)
1/2 tbsp chia seeds
3 tbsp yogurt (greek vanilla yogurt is my fav)
1 small box of raisins
I mix it all up and store it in my fridge overnight & enjoy it the next day (on my drive to drop the kids off). You can warm it up if you like. I like mine cold.
